Breakfast in bed any one? Our friend Tiphaine (check out her other recipes here) has created a delicious Pancake recipe for us, and has even kindly included both vegan and paleo alternatives! Get ready to tuck in, the apple butter is just divine!

Apple Pancake

Ingredients:

For the apple butter:

– 1 Primal Pantry Apple & Pecan Raw Paleo Bar
– 3 Medjool Dates
– 4 tbsp Maple Syrup
– 1 Apple
– 60ml Almond Milk

For the vegan pancakes:
– 30g Coconut Flour
– 2 tbsp Cashew Butter

– 2 tbsp Linseed (previously soaked in 6 tbsp of water)
– 50g Coconut Yogurt
– 1 tbsp Maple Syrup
– 1 tbsp Coconut Oil
– 20g Oatmeal

Paleo Pancake alternative :
– 2 Bananas
– 1 Egg
– 1 Pinch of Cinnamon

Makes 2 servings

 

Instructions:
1. Prepare the apple butter. Chop the dates, the Primal Pantry bar and the apple. Blend all the ingredients together, then set aside in a cool place.

2. For the vegan pancakes: soak the linseeds into water for 5 minutes, in a small bowl. In a separate bowl, blend the oatmeal and the coconut flour. Add the maple syrup, the coconut oil, the cashew butter and the linseeds and whisk it. Then, stir the coconut yogurt in the mixture.

3. For the paleo pancakes: mash two bananas with a fork into a pulp. Add the egg to the banana pulp and whisk together (add the cinnamon if you’re using).

4. Melt a tsp of coconut oil into a frying pan. Pour some of the batter into the frying pan and fry until golden brown on either side.

Serve it with apple slices, pecan, and maple syrup. Don’t forget your apple butter!
